Chef Scott Cohen, Corporate Executive Chef

Chef Scott Cohen’s love for the French culinary arts began during his formative years in high school where he worked part-time in local restaurants and developed a passion for the food service industry. Today, that love has evolved into an unapologetic passion, which will be seen, and more importantly, tasted at the soon-to-be-open Brasserie Pavil.

Chef Cohen has been widely regarded as one of San Antonio’s most celebrated chefs for his work as Executive Chef for two of San Antonio’s premier River Walk restaurants; Las Canarias at La Mansión del Rio and Pesca on the River® at the Watermark Hotel & Spa. He now brings more than three decades of traditional French culinary experience to Brasserie Pavil.

His French culinary training was enhanced when he worked in New York at the three-star La Reserve as Sous Chef under the late Andrew Gaillard. At the urging of famed Master Chef Daniel Boulud, Chef Cohen traveled to France to further hone his culinary skills. While there, he apprenticed at the famed Le Moulin de Mougins under Roger Verge as well as trained under Georges Blanc at Restaurant Georges Blanc. Chef Cohen was awarded the Bronze Medal of the French Vatel Club, honoring him as one of the nation’s outstanding young chefs and positioning him as one of the first American chefs to be honored with a membership to the prestigious club.

“When I began cooking in San Antonio I was amazed to realize that everything I needed was within a 20-minute drive,” says Chef Cohen. “It made me feel like I was back in the South of France where I had trained many years ago and, in fact, the agricultural abundance of the Texas Hill Country is on a par with Provence. I’m excited to continue in my goal to utilize the best of what this area has to offer and provide what will be a truly great French culinary experience right here in San Antonio.”

Pavil Restaurant and Bar® is a French brasserie serving casual French fare such as onion soup, fondue and coq au vin along with fresh seafood, steaks, salads and other deliciously inspired dishes. We have an extensive wine selection as well as hand crafted local and international beers served from our handsome zinc bar. With reservations, we can serve groups from 10 to 90 persons in one of our lovely private dining rooms. The relaxed, friendly atmosphere is refined yet comfortable—matching our passion for exceptional service.
