San Antonio’s First Classic-Style French Brasserie to Begin Service December 18, 2008
San Antonio residents will get an early holiday present – with a French twist – via the December 18th limited seating opening of Brasserie Pavil™ (www.brasseriepavil.com), the city’s new classic-style French brasserie. The restaurant, which represents a new dining concept for San Antonio, is the brainchild of Texas entrepreneur Patrick J. Kennedy, founder of the Watermark Hotel Company.
Located in the new Plaza Las Campanas mixed use development at the southeast corner of Huebner Road and Loop 1604, Brasserie Pavil will serve classic Parisian brasserie fare from mid-morning through late-night supper in a relaxed and informal, but sophisticated setting. According to Chef Scott Cohen, one of the Southwest’s most respected culinarians, patrons will feel like they have been swept away to Paris in a style that is appealing to both the palate and the eyes.
“This is a place with an atmosphere equally perfect to meet friends for coffee and pastry, cheese fondue, a great glass of wine or crafted beer, an inspired martini, or grand plateau at the zinc bar,” said Cohen. “We will incorporate the best seasonal products available into classic French dishes and truly make this a central meeting spot for both San Antonio residents and visitors.”
In true brasserie form, Brasserie Pavil also will offer an extensive wine program with a wide variety of carefully selected French and domestic wines, as well as local and internationally crafted beers. Freshly baked breads, cheeses and packaged coffee will be available as part of Brasserie Pavil’s “take-out” service for customers wishing to enjoy food items in their home or office..
The new restaurant is expected to meet the standards of hospitality set forth by Mr. Kennedy’s ,management team in his previous experience as the former owner of San Antonio’s historic La Mansión del Rio Hotel and the internationally acclaimed Watermark Hotel® & Spa and raise the bar in the city with its first world-class brasserie.
“We’ve worked tirelessly to get Brasserie Pavil ready for its soft opening on December 18th,” said Kennedy. “This is essentially a sneak-peek through the holidays to whet the appetites of the dining community in San Antonio for a new dining experience. We think it is an experience they will truly enjoy and appreciate and, under Scott’s guidance, they will be in for a treat.”
Chef Cohen is well known for his menus as Executive Chef for two of San Antonio’s premier River Walk sister restaurants, Las Canarias at La Mansión del Rio and Pesca on the River® at The Watermark Hotel & Spa. Cohen brings to Brasserie Pavil three decades of traditional French culinary experience, fine-tuned while working in Provence, France and at New York City’s La Reserve as Sous Chef under the late Andrew Gaillard.
Brasserie Pavil will be open seven days a week serving lunch, dinner and late night snacks along with brunch on Saturday and Sunday.
